We engaged in a collaborative effort with the European Food Safety Authority (EFSA) to elucidate the complex correlation between emulsifiers and microbiota, which is at the vanguard of scientific investigation. A comprehensive review of the literature was conducted using primary bibliographic databases. Through meticulous inquiry, we have uncovered crucial connections encompassing a wide range of conditions, including type 2 diabetes, obesity, and colitis. Our work included the setting up of timely email alerts and proactive monthly reporting.
