Development of AOPs for Proteins Triggering Celiac Disease

In collaboration with the European Food Safety Authority EFSA, we conducted an exhaustive systematic literature search to understand the adverse outcome pathways (AOPs) related to proteins triggering celiac disease. After analysing almost 17,000 documents, we focused on 920 key studies. Using EFSA’s stringent systematic review guidelines, we proposed AOPs in alignment with OECD principles. Our comprehensive report showcases our commitment to scientific precision and innovation in the realm of food safety and health.
