In our work to understand N-nitroso compounds (NOCs) in food, an Extensive Literature Search was conducted spanning multiple scientific databases. With over 18,592 references sourced, we streamlined the data into specific areas: from chemical identification to observations in humans. Our findings are paramount for businesses concerned with food safety, supply chain integrity, and regulatory compliance, providing a comprehensive lens into the world of NOCs in our daily food product.
